Back by popular demand! The 2016 Summer Health Challenge has begun! The rules are similar to last year; you must attend 2 classes a week and set goals either weekly, monthly or for the entire challenge. We have added 1 more rule, you must eat clean. Some people seem to struggle with this one, but it is simples really – only eat freshly made food. No preservatives, artificial flavors or artificial anything. Just real food.
This can be a challenge for those who live a busy life. I know I have good weeks and bad weeks with my nutrition. If I don’t plan ahead, I have no choice but to eat out. Some times I can get fresh made food, but if you head to a chain restaurant, more likely than not, some portion of the food has been pre-made and is full of chemicals, and unnatural ingredients.
On Sunday we grilled up some chicken breast to create 2 yummy salads; Greek and Southwestern. These are both easy to pack up and keep without getting soggy. Took about an hour tops on Sunday afternoon and well worth the time to have everything all ready. There are many days that I do not eat enough, because I don’t leave enough time to put my lunch together. This week al I have to do is pull the bowl out of the fridge!
- 1 red pepper
- 1/2 cucumber
- 1/4 red onion
- handful of cherry tomatoes
- feta cheese 2 tbsp
- mixed greens (keep separate until you eat)
- grilled chicken
Grilled chicken seasoning:
- 1 tsp oregano
- 1tsp thyme
- 3 sprigs of rosemary, leave pulled off
- 1/2 lemon
- 3 tbsp olive oil
Put in a zip lock bag and mix. Add the chicken and mix around. Let sit in the fridge for as long as you want, for best results, over night. Then grill! Easy Peasy!
